How to Make Beet Salad

I have to admit, I am not a big fan of Beets. However, I found this recipe for Ukrainian Salat Vinaigrette (Beet Salad). I took a second look and thought – “I have to try this.” Here are the ingredients and a short video to help you prepare your Beet Salad. 

1 pound beets

1 pound carrots

1 pound potatoes

2 large dill pickles, diced

1 onion, minced

1 (8 ounce) can peas, drained

2 tablespoons olive oil

1/2 teaspoon ground black pepper

1 tablespoon chopped fresh parsley (optional)

1/2 teaspoon salt

Serves 16
